Fiesta Mexicana was a delicious taste of history!
Several Baja Buddies gathered at Máxico Restaurant for a special Fiesta Mexicana lunch, and what a treat it was!
Many of us ordered the traditional Chiles en Nogada, and we got an unexpected visit from the head chef, who shared the history behind this iconic Mexican dish and explained how Máxico stays true to the original recipe, including hand-grinding the meat.
The presentation was beautiful, right down to the little Mexican flag on each plate. But there was a really cool detail behind it: the flag represented what the Mexican flag looked like during the time period when Chiles en Nogada originated. And yes, it was actually made from edible rice paper!
Good food, a little history, and a table full of Baja Buddies. Just another reason we love getting together! ❤️💚🤍
